"Recommended by our accommodation hosts, we booked online. We were not disappointed by the welcome, setting, staff or food, it was all perfect. My French is limited (but I try) and the hosts were wonderful, with some English speaking but so very helpful even with my limiting language skills. Food was simply fantastic and we were helped with wine choices, opting for a local wine from Carcassonne. I had prawn and sweetbreads to start and guinea fowl as main which was perfectly cooked and well presented. My partner had Foie gras and an excellently cooked steak. It was a lovely evening and experience, thank you."

"When visiting Carcassonne we stumbled across this restaurant, it had a large covered and quiet terrace. The waitress was very friendly and the food was more than delicious. After we had ordered we received an amuse (a little toast with a scrumptious tomato-basil sauce). Furthermore, the fish (both the tuna of the starter and the ‘pêche du jour’ of the main course) were really on point. Not to forget, the plates were really beautiful too. Nonetheless, it may be interesting to add a vegetarian/vegan option to the menu."

"Wow! Our 2nd visit and it didn't disappoint. It was a final hurrar with our parents to celebrate an amazing visit. The food, wine and service were all exceptional. 3 of the table started with veal sweetbreads and prawns in a delicious sauce. I had the fois gras stuffed with fruit and wrapped in ham, just amazing! For the main meal I had the seafood and was extremely pleased to find razor clams, mussels, prawns and a lovely piece of seabass. The others had the lamb and said it was superbly cooked, tender and packed full of flavour. We'll definitely be going back again soon!!"

"This restaurant is a tucked away gem. We tried to get a table on Tuesday evening but they were fully booked.The staff suggested to call in the morning. Which we did, and they recognised me. I do not know if they had tables available inside. We were sat outside under a canopy, away from any draft. The service was excellent. The starters and main courses were delicious. The fig coulis went really well with foie gras. And the veau was so soft and cooked to perfection. If I have to criticise anything, it would have to be the white chocolate tartlet in the triple chocolate desert. its flavour was too close to condensed milk. But then, I'm a little fussy. It is value for money, we always suggest it to our friends. I highly recommend it."

"What a super place to have our last meal in Carcassonne. We had to have the Cassoulet and it did not disappoint, it was absolutely lovely. When we come back we will definitely visit Chez Fred again, the restaurant is fantastic and outside eating as well Highly recommend"
